This post delves into my personal journey of transformation through “Clean Eating,” detailing the profound “Before and After” stages. It has truly been a long and challenging path to regain my health and vitality, but embracing a real-food, clean-eating diet has been the ultimate solution for me. My sincere hope is that by sharing my story, I can inspire you to embark on your own positive changes and empower you to believe in your ability to transform your health, just as I have.

Before: Overwhelming Health Issues
Before I embarked on my journey towards a clean eating diet, my plate was filled with what is commonly known as the Standard American Diet (SAD). This meant an abundance of highly refined carbohydrates, excessive added sugars, and low-quality proteins, which sadly offered little nutritional value. Fresh fruits and vegetables, the vibrant cornerstones of a healthy diet, were conspicuously absent from my meals. This dietary pattern, common for many, inadvertently set the stage for a cascade of health complications.
The consequences of this lifestyle manifested in a host of deeply unpleasant symptoms, affecting both my physical well-being and emotional state. My medical diagnoses paints a stark picture of the struggles I faced:
- Chronic migraines: Debilitating headaches that frequently disrupted my daily life.
- Hashimoto’s thyroiditis: An autoimmune condition where my immune system attacked my thyroid gland, leading to fatigue and metabolic imbalances.
- Thyroid cancer: A shocking diagnosis that further underscored the severity of my health issues.
- Anxiety and panic attacks: Overwhelming feelings of worry and intense episodes of fear that made simple tasks incredibly difficult.
- Eating disorders: A complex struggle with food that impacted my mental and physical health.
- Multiple food sensitivities: Reactions to various foods that caused discomfort and inflammation.
- Irritable bowel disease (IBD): Chronic digestive issues causing pain and distress.
- Hypothalamic amenorrhea: The loss of my menstrual cycle, a clear sign of severe hormonal imbalance.
- Polycystic ovarian syndrome (PCOS): Another hormonal disorder with wide-ranging symptoms.
- Osteopenia: A precursor to osteoporosis, indicating weakened bones.
Looking at that extensive list, it’s easy to feel overwhelmed, and believe me, I lived that feeling every single day. Yet, I know I am not alone; countless others are silently enduring similar struggles. The cumulative effect of symptoms from various diseases and conditions can truly take a toll. I experienced everything from persistent insomnia and unexplained hives to a pervasive, unshakeable fatigue that seemed to defy all attempts at rest. If you are reading this and feeling weighed down by an seemingly endless list of health concerns, I want you to know, with absolute honesty, that I understand exactly what that feels like. There is a profound sense of isolation that comes with such chronic suffering, and my hope is that my journey can offer a beacon of shared understanding and eventual hope.
Childhood of Chaos & Processed Foods
My formative years, growing up in the 1980s, were largely defined by the convenience and pervasive marketing of processed foods. The food industry aggressively targeted children, and I was no exception. I vividly recall pleading with my mother for sugary cereals, tempting candies, and anything packaged or bursting with sugar. My palate, unfortunately, became conditioned to these artificial flavors and sweeteners, leaving little room for more wholesome options.
Years later, during my nutrition studies, I uncovered a significant piece of my dietary puzzle: I am a “super-taster.” This genetic predisposition means that certain compounds, particularly those found in vegetables like broccoli, taste intensely bitter to me. This explained my childhood aversion to anything green, making the challenge of healthy eating even more pronounced. Consequently, my health undeniably suffered due to these poor eating habits, and I remember experiencing frequent illnesses and a general lack of vitality.
The Onset of Binge-Eating
A pivotal turning point occurred when I was about 10 years old. My family faced severe financial bankruptcy, plunging our home environment into profound instability and relentless stress. We were forced to sell our home and most of our possessions, a deeply traumatic experience for a young child. It was during this tumultuous period that I instinctively turned to food as a source of comfort and escape. I would retreat to my bed, blankets pulled tight, with a book and a hidden bag of candy under my pillows. For a brief hour, this veil of sugary safety offered a much-needed, albeit temporary, respite from the chaos.
My sister and I spent a temporary period living with an aunt and uncle before we moved from Oklahoma to California to reunite with our parents, starting life completely from scratch. As we navigated this new beginning, my nascent addiction to using sugar for emotional comfort firmly took hold. The occasional candy binges escalated into a daily ritual, becoming the sole source of happiness I anticipated after school. This secretive habit bred deep shame, initiating a destructive cycle of guilt, self-reproach, and a complete lack of self-control around food. Concurrently, my weight steadily increased, my skin suffered from breakouts, and my self-esteem plummeted to alarming lows.
The self-loathing I experienced was so intense that it utterly eroded any semblance of self-confidence. This unhealthy pattern of binge-eating and profound self-dislike persisted for a grueling decade. I felt incredibly isolated, without the motivation, education, or positive role models necessary to initiate healthy changes. It was a dark and lonely period, marked by a pervasive feeling of helplessness.
Adolescence & Young Adulthood
By the time I entered college, my hormonal system was so profoundly imbalanced that I had never experienced a normal menstrual cycle. Seeking medical advice, the only solution presented by the doctor was to begin hormonal birth control. While going on the pill did regulate my cycle, it introduced a new set of distressing symptoms: heightened anxiety and frequent migraines. At this point, I was so profoundly disconnected from my body and its subtle signals that I failed to recognize the significance of these side effects, continuing to take the pill for an additional 15 years.
After completing my bachelor’s degree, I embarked on a professional career as a fundraising executive for non-profit hospitals. The demanding nature and long hours of this role further exacted a toll on my already fragile health. Although the frequency of my candy binges diminished, new unhealthy coping mechanisms and addictions emerged, such as compulsive over-exercising. This era also coincided with the peak of the “low-fat craze,” a misguided dietary trend that led me to believe it was healthy to spend an hour on the treadmill, only to return home and consume fat-free cookies and ice cream. My body was sending clear signals of distress, yet I was interpreting them through the lens of popular, often flawed, health advice.
A significant bright spot during my twenties was meeting a sincere, funny, and kind man who would become my boyfriend and, eventually, my devoted husband. Falling in love provided immense mental and emotional support, undoubtedly playing a crucial role in my well-being. However, as two busy professionals, our eating habits continued to be far from ideal. We frequently dined out, leading to both of us gaining weight during the initial years of our relationship. My stress levels further escalated when I enrolled in an incredibly demanding full-time graduate school program, adding another layer of pressure to my already strained system.
Stress, Anxiety, & Panic Attacks
Around this time, I developed an extreme, debilitating fatigue that ultimately led to a diagnosis of Hashimoto’s thyroiditis, an autoimmune thyroid condition, alongside multiple thyroid nodules. My endocrinologist, unfortunately, offered little hope, stating there were no dietary or lifestyle changes that could truly help. The disheartening prognosis was that my thyroid would eventually be completely destroyed by the disease. This was incredibly discouraging. (Today, having worked with a functional medicine physician, I understand that there are indeed numerous dietary and holistic interventions that can significantly reduce thyroid antibodies. I deeply regret not having this crucial information back then.)
By this stage, my migraines were occurring almost daily, accompanied by debilitating panic attacks that made it nearly impossible to maintain many of my relationships. When I sought help from my internal medicine doctor, his only suggestion was to consider taking an experimental daily drug typically prescribed for seizures. The thought of ingesting such a potent medication horrified me, and I firmly refused the prescription. This moment—that visceral red flag—was my very first, powerful inkling that I needed to take proactive control over my own health narrative, rather than passively accepting conventional wisdom that felt inadequate.
Throughout all these profound struggles, I meticulously concealed my fears from everyone around me, including my husband. I invested an enormous amount of energy into maintaining a deceptive facade, always smiling and pretending that everything was perfectly fine. Looking back, I can now clearly see that I was slowly deteriorating, suffering in complete silence, a testament to the heavy burden of my physical and emotional ailments.
My “A-Ha” Moment
Finally, a pivotal moment arrived in 2004 when I watched the documentary film Super Size Me. The film followed a man who ate exclusively fast food for 30 days. While I wasn’t entirely surprised by his subsequent decline in health, what truly resonated and inspired me was the segment showcasing the vibrant, fresh fruits and vegetables that his natural chef-girlfriend prepared for him after the experiment concluded. The food designed to aid his recovery looked so incredibly vibrant and nourishing—a stark contrast to anything I had ever considered buying or preparing myself.
Immediately after leaving the movie theater, I headed straight to the grocery store. My cart quickly filled with as many fresh, whole foods as I could find. This impulsive yet profound act marked the very first, conscious step I took on what would become a long and challenging journey to reclaim my health and well-being. It was a simple decision, but one that ignited a spark of hope and a new direction for my life.

Testing a Vegan Diet
My health journey, however, was far from over, and further challenges lay ahead. Around 2010, I discovered veganism and became convinced that a 100% plant-based diet held the key to solving all my persistent health problems. This strict approach, which meticulously excluded all animal products, initially appeared to yield positive results. I experienced weight loss and a surge in energy, and my chronic migraines seemed to vanish. Buoyed by this initial success, I even built a business creating recipes for the burgeoning healthy, vegan community.
Concurrently with my shift to veganism, I also adopted a gluten-free diet. This was necessitated by the sudden onset of chronic hives. Regardless of what I ate, my skin would erupt in itchy, red welts, even affecting my eyelids—a truly frightening experience. Reflecting on this period, I now believe that my high-bean vegan diet contributed significantly to developing “leaky gut” syndrome, which can trigger inflammatory responses like hives. While some of my symptoms indeed improved, my thyroid disease took a serious and alarming turn in 2012. During a routine annual ultrasound to monitor my thyroid health, I received the devastating diagnosis of thyroid cancer.
Following surgery to remove the tumor, I faced immense difficulty adjusting to life without a functioning thyroid gland. This new reality brought a fresh wave of symptoms, including persistent chronic skin hives, profound fatigue, crippling depression, and an exacerbation of my food sensitivities. Furthermore, I became overly vigilant about my food choices, developing a type of eating disorder known as orthorexia, characterized by an unhealthy obsession with “healthy” eating. At this critical juncture, it became abundantly clear that the vegan diet was no longer serving my complex health needs; in fact, it was actively contributing to new issues.
After: Discovering a Clean Eating Diet
The true turning point arrived in 2015 when I began working with functional medicine physicians and practitioners. Unlike previous conventional approaches, these experts helped me develop a comprehensive plan designed to address the root causes of my complex health problems. They guided me in identifying the specific foods that would genuinely nourish and sustain me, rather than simply managing symptoms. Additionally, I consulted an eating disorders specialist to tackle the deeply ingrained, unhealthy beliefs I held about food and my body.
Today, I wholeheartedly feel that a “clean eating” approach is the most accurate and empowering description of the flexible, real-food way I choose to nourish myself. While I ultimately had to commit to being gluten-free and dairy-free, and largely give up most grains, I very rarely feel deprived. This isn’t about rigid restrictions; it’s about making choices that make me feel good from the inside out. I’ve learned that true satisfaction comes from nutrient-dense foods, not from processed cravings.
Crucially, I must emphasize that diligently working on my gut health has been paramount to my recovery. This involved a multi-faceted approach: taking targeted probiotics and other supportive supplements, consistently consuming a variety of probiotic-rich foods like fermented vegetables, and actively implementing strategies to manage my chronic stress levels. The intricate connection between gut health, inflammation, and overall well-being became undeniable in my personal experience.
As a direct result of these concerted efforts, my overall inflammation has decreased tremendously, and my once overwhelming list of health issues is now far more manageable. The best part? I genuinely enjoy vibrant, colorful, and nutrient-rich foods that are not only satisfying and healthy but also incredibly delicious. I rarely experience hunger or the feeling of being deprived, a stark contrast to my past struggles. It is incredibly rewarding to realize that recovery, even from such a long and serious list of chronic health issues, is indeed possible. This transformation has empowered me with energy, clarity, and a profound sense of well-being.
